You are going to love this quick and easy Mesquite Smoked Carolina Treet BBQ chicken. This recipe only adds one thing in addition to this amazing BBQ sauce… a nice touch of mesquite smoke flavor that compliments it perfectly. If you are not familiar with Carolina Treet BBQ sauce, this sauce has been around the Carolina’s since its birth in Wilmington in 1953. It is a blend of spices and vinegar that Carolina BBQ is known for and contains no sugars, sweeteners, or tomato products.
Instructions
Chicken Instructions
Take thawed chicken breast and lightly coat both sides with olive oil.
Apply fresh ground salt and pepper to both sides.
Apply a generous amount of Carolina Treet BBQ Sauce to both sides of the chicken.
Grill Prep
Fill the Weber Rapidfire Chimney Starter with charcoal. How much charcoal depends on how much chicken you are cooking. Enough to get the grill to 300 degrees.
Light the charcoal from the bottom of the chimney. Let burn for approximately 15 minutes until coals are at temperature and ready to place in grill.
Grilling
Place hot coals in Char-Baskets and place them on the outer sides of the grill to create an indirect cooking area in the center of the grill grate.
Put soaked mesquite wood chips into the smoker box and place over a portion of the hot coals.
Once wood chips begin to smoke place chicken breast in the center of the grill away from direct charcoal heat.
Cook side for 5 minutes.
Flip and then recoat with BBQ sauce brushing in for consistent coverage.
Cook for 5 minutes.
Flip one final time and let cook for 2 minutes.
Remove from the grill and let rest for 5 minutes prior to serving.
